RECIPE: How to make delicious Chapati Mayai

Many Kenyans call Chapati Mayai a ‘Rolex’. Learn how to make the rolex with a twist in this recipe by Chef Martin of Villa Rosa Kempinksi.

Ingredients

2 Eggs Eggs

1/4  Shredded Cabbage

1 Tomato (Sliced)

1/2 Onion (Sliced)

1 Green Pepper (Sliced)

Kachumbari salsa

2 Whole Tomatoes

1 White Onion

1 piece of Coriander (Dhania)

1 Green Chilli

Salt

Pepper

 

METHOD                                                        

Fry the two eggs in a frying pan over medium heat on both sides then place the chapati on top of the fried egg.

In a separate pan, saute the sliced onions, add the shredded cabbage, tomato slices and green pepper, season with salt and pepper

Place the egg and chapati on a grease-proof paper, then put the fried vegetable mixture on top of the egg.

Roll the chapati while using the grease-proof paper to make it firm.

For the kachumbari salsa, blend the tomatoes, onions, coriander and chillies until smooth.

Finally slice the egg and chapati roll and serve with kachumbari salsa.
